Miso is becoming increasingly popular in Australia. Find out what all the fuss is about!


  • 1 tbsp olive oil

  • 2 tbsp grated ginger

  • 2 garlic cloves, grated

  • 1 cup brown onion, chopped

  • 3 cups brown rice

  • 14 cups water

  • 4 cups kale, chopped

  • 1 tsp salt

  • 1 pinch pepper

  • 6 tbsp white miso paste

  • 2 cups mushrooms, sliced

  • 250gm firm tofu, cubed

  • 4 sheets nori, torn into pieces


  • 1.

    Heat a medium size pot and add the oil.

  • 2.

    Add the onion, garlic, and ginger and cook until soft.

  • 3.

    Add the brown rice and cook for two minutes, stirring.

  • 4.

    Add the water, bring to boil and reduce the heat to a simmer. Cook for 20 minutes.

  • 5.

    Add the miso paste, mushrooms and tofu, and cook for another 10 minutes until the rice is tender.

  • 6.

    Remove from the heat and season with salt and pepper.

  • 7.

    Add the kale and serve with nori pieces on top.
