Heat a medium size pot and add the oil.
Add the onion, garlic, and ginger and cook until soft.
Add the brown rice and cook for two minutes, stirring.
Add the water, bring to boil and reduce the heat to a simmer. Cook for 20 minutes.
Add the miso paste, mushrooms and tofu, and cook for another 10 minutes until the rice is tender.
Remove from the heat and season with salt and pepper.
Add the kale and serve with nori pieces on top.
