If you don't know how to serve your oysters, try this two quick variations.


  • 12 fresh oysters

  • Baby coriander, to garnish

  • Chill Vinaitgrette

  • 1 small shallot, finely diced

  • 1⁄2 chilli, finely diced

  • 1 tsp caramelised balsamic

  • 1 tsp lemon infused oil

  • juice of 1⁄2 lime

  • Apple Vinaigrette

  • 1 apple, finely diced

  • 1 spring onion, finely diced

  • 1 tsp rice wine vinegar

  • 1 tsp lemon oil


  • 1.

    For the Chilli Vinaigrette combine all ingredients together in a small dish and set aside.

  • 2.

    For the Apple Vinaigrette place all ingredients for this vinaigrette in a small dish, mix well and set aside.

  • 3.

    Top six of the oysters with the apple vinaigrette and the remaining six with the chilli vinaigrette. Garnish with baby coriander and serve straight away.
