This colourful salad is rich in nutrients and flavour.

Ingredients

  • Juice of 1 lemon

  • 1 tsp honey

  • 1 tbsp pine nuts

  • 1 tbsp flaked almonds

  • 1/4 cup sultanas

  • 1 1/2 cup Israeli couscous

  • 1 red onion, finely sliced

  • 1/4 cup cherry tomatoes, halved

  • 1 bunch fresh parsley, roughly chopped

  • 1 fillet Huon Hot Smoked Salmon

  • 2 passionfruit flowers, to garnish

Method

  • 1.

    Into a warm pan add lemon juice, honey, pine nuts, flaked almonds, sultanas until sultanas are plump and juicy.

  • 2.

    Boil Israeli couscous in salted water until soft, drain, then stir through red onion, tomatoes, parsley, Huon Sweet Chilli Hot Smoked Salmon and the sultana mixture.

  • 3.

    To serve garnish with passionfruit flowers.
