  • 2 Huon Fresh Salmon Fillets

  • 2 potatoes, boiled and mashed

  • 1/4 cup garlic aioli

  • 1 bunch dill

  • 1 bunch parsley

  • 1 bunch chives

  • 2 tbsp Ashgrove Traditional Butter

  • 1tbsp capers, chopped

  • 1 handful baby spinach leaves

  • 1 garlic clove, diced


  • 1.

    Roughly chiffonade your fresh herbs, then add to your potatoes along with herbs, butter, chopped capers and cream. Smash your potatoes.

  • 2.

    To make your crispy skin salmon; place your salmon into a hot frypan skin-side down with some oil and cook for around 4 minutes each side. Remove salmon from pan and set aside to rest.

  • 3.

    Into the pan wilt your spinach with garlic and a small knob of butter.

  • 4.

    To plate serve your smashed potato, aioli, and wilted greens.
