Abalone is one of Ben's favourite ingredients. Learn how to cook it like a pro.


  • 2 small abalone, sliced

  • 1 packet Barilla Wholegrain Spaghetti

  • 2 tbsp vegetable oil

  • 1 confit duck breast

  • 1 small black pudding, sliced

  • 1 bottle whisky bbq sauce

  • Salt and pepper, to season

  • Assorted micro herbs


  • 1.

    Cook your spaghetti in salted water until al dente drain and drizzle with oil and set aside.

  • 2.

    Into a medium-size pan, over a high heat, sear your black pudding. Remove from heat and set aside.

  • 3.

    Remove the flesh from one of your duck breast and to a new cold pan bring it up to a hot temperature so your duck is crispy.  Add your abalone and cook very quickly.  Add your whisky and bbq sauce to the pan.  Fold in your pasta.

  • 4.

    To serve season with salt and pepper and place your black pudding on the bottom of the plate top with the pasta and garnish with micro herbs.
