If you're looking for a new way to do mussels, why not throw them in a curry?


  • 1 rasher of bacon, diced

  • 1 dozen mussels

  • 1L of pre-made, store bought curried soup

  • 1 lemon, juiced

  • 1 red chilli, sliced into rounds

  • 1/2 of a bunch fresh parsley, roughly chopped


  • 1.

    Into a hot saucepan pan add bacon and sauté for 4 minutes or until until crispy.

  • 2.

    Add some water and your mussels to the saucepan with the bacon, close the lid and steam for approximately 3 minutes until the mussels are cooked.

  • 3.

    Remove the cooked mussels from their shells and set aside while you warm the soup.  Once the soup is hot add the mussels and warm through.

  • 4.

    Serve topped with fresh chilli, a squeeze of lemon and parsley.
