Try your hand at this popular oyster dish.


  • 1 dozen oysters, shucked

  • 2 rashers, dry cured and cold smoked bacon, diced finely

  • 1 bottle whisky bbq sauce

  • 1 lemon, juiced

  • 1 good quality sausage meat, removed from its skin


  • 1.

    Break open your sausage and crumble into a frypan and sauté until cooked.

  • 2.

    Combine your cooked sausage mince, whisky bbq sauce and bacon in a bowl and mix well.

  • 3.

    Top your oysters with the mince mixture and finish with a blowtorch.
