This is taking the gourmet toastie trend to a new level.


  • 2 quail, deboned

  • 1 garlic clove, roasted

  • 1/2 lemon, segmented

  • 2 tbsp burnt garlic aioli

  • 6 thick slices of tasty cheese

  • Handful of kale

  • 2 tbsp Ashgrove Traditional Butter, warmed

  • 4 slices of sourdough


  • 1.

    Onto a medium fire place your garlic clove and then roast quail for approximately 5 minutes.

  • 2.

    To make your sandwich, butter the outside of the bread, and spread aioli on the inside. Then load up with cheese, quail, charred garlic, lemon segments and kale.

  • 3.

    Put the sandwich over the fire to toast both sides until cheese has melted.
