Drizzle oil in a hot medium pan, add garlic and mince and brown the mince. Add the curry powder and chicken stock, simmer for approximately 5 minutes.
Add carrot, cabbage, and bean sprouts in that order cooking each vegetable quickly so they stays crunchy.
Serve with crunchy noodles and sliced shallots.
