Be daring with this delicious and fresh dish.


  • 2 scallops, diced

  • 1 chorizo, finely diced

  • 1 cube of tuna, finely diced

  • 1 baby fennel stalk, finely diced

  • one this slice of cucumber with skin, finely diced

  • 1 spanish onion, finely diced

  • one thin slice of tomato with skin, finely diced

  • 1 tbs greek yoghurt

  • Hillfarm ginger infused oil, drizzle

  • 1 lime, juiced

    Add to a mixing bowl the fennel, cucumber, spanish onion, tomato, chorizo and tuna. Mix until combined then add the greek yoghurt, scallops, lime juice and oil. Mix further and serve with a drizzle of oil on top.
