These raw, no-cook doughnuts are sugar-free, vegan and are a delicious sweet but nutty flavour.
Blend the cashews and coconut in a processor until fine. Add the rest of the ingredients and process into a smooth dough.
Press into silicon doughnut mold to shape at the same time shaping the hole in the center.
Place in freezer for 15 minutes before removing from mold. You can alternately fashion into a doughnut shape using your hands.
For the icing::
Blend the cashews, syrup, lemon, salt and vanilla until completely smooth.
Add the coconut oil and coconut butter and re-blend.
Remove doughnut from the freezer and flip out of the mold. Then one by one dip the tops of the doughnut into the icing or alternately drizzle icing over the top with a spoon.
Add your favorite topping and place into the fridge to firm up before serving.
