Spread this quick and easy jam onto slices of warm buttered toast.
Place a large non-stick frying pan over high heat.
Add the plums, sugar, vanilla beans and seeds and the water and stir to combine.
Bring to the boil and cook, stirring occasionally, for 12–15 minutes or until thickened and the plums are soft.
Remove from the heat and allow to cool completely.
Remove and discard the vanilla beans to serve. Makes 2 cups
