This old-school favourite is an idea dessert for young and old. 


  • 600ml milk

  • 300ml sugar syrup

  • 6 tbsp malt syrup

  • 1 litre vanilla ice cream

  • 300ml cherry syrup

  • Cherries, to garnish

  • For the cherry syrup

  • 500g cherries

  • 250ml water

  • 200g sugar

  • For the sugar syrup

  • 200g sugar

  • 250ml water


  • 1.

    For the cherry syrup, remove the pips from the cherries and place into a large saucepan with water and sugar. Bring to a boil then reduce to a simmer. Gently poach for 10 minutes or until the cherries have softened. Transfer the mixture to a blender, and blitz until smooth. Strain and set aside to chill.

    For the sugar syrup, combine the water and sugar and simmer for 10 minutes, or until the sugar has dissolved and the syrup has thickened slightly.

    Make the milkshakes individually. Place 100ml milk, 2 tbsp sugar syrup, 1 tbsp malt extract and 1 scoop of vanilla ice cream into an milkshake maker or a blender. Blitz until smooth. Pour 1 tablespoon of the cherry syrup into a cup, and tilt the cup in a circular movement to cover the inside of the cup with syrup. Pour the milkshake into the cup. Garnish with an extra scoop of ice cream, another drizzle of cherry syrup and a cherry on top. Repeat this process to make the remaining milkshakes and enjoy chilled.
