The perfect refreshment for a sunny afternoon.
Make a sugar syrup by placing the water and sugar into a medium sized saucepan. Zest the blood oranges and add the zest to the syrup. Simmer gently for 5 minutes until the sugar has dissolved and the syrup has thickened slightly. Transfer to a large jug. Allow to cool.
Juice the blood oranges and add the juice to the syrup. Mix well, sieve and store in sterilized bottles.
To serve, mix 1 part blood orange cordial and 2 parts water or soda water, and serve chilled with a wedge of lime.
