'Bread cheese' may sound confusing, but this Finnish cheese is similar to halloumi. 


  • 1 Belgian endive 

  • 1 bunch frisée (curly endive)

  • 100 g blue cheese

  • 1 pack Finnish bread cheese (squeaky cheese) or halloumi

  • 1 pomegranate

  • 50ml pecans

  • Vinaigrette:

  • 50ml oil

  • 2 tbs white wine vinegar

  • ½ orange’s juice

  • 5 tbs cloudberries

  • a dash of black pepper

  • a pinch of salt

  • 1 tbs agave syrup


  • 1.

    Mix the vinaigrette ingredients together thoroughly.

  • 2.

    Arrange endive leaves and frisée on a large plate.

  • 3.

    Add blue cheese and bread cheese, then pomegranate seeds and crushed pecans. You can also warm the bread cheese on a pan quickly if you want.  Serve with the vinaigrette.
