Chaga is a type of mushroom and is believed to possess medicinal properties.
Prepare chaga broth. Pour chaga powder in cold water and boil for few minutes. Strain the broth through two coffee filters to make it clear.
Pour broth back into the saucepan.
Grate garlic and ginger into the pan, add dashi powder. Next, add ripped kombu seaweed and let simmer until the seaweed is soft. Add bok choy and shiitake mushrooms and miso paste. Don’t let the soup boil after adding the miso paste.
Finally, add cut tofu and scallion on the bowl and pour the soup on top. Garnish with scallions.
