These muffin/donuts are so special we gave them their own name: 'Monuts'. 


  • 300g (2 cups) self raising flour, sifted

  • 2/3 cup caster sugar

  • Zest of 1 orange

  • ½ tsp cinnamon

  • 1 egg

  • 180ml buttermilk

  • 1/3 cup veg oil

  • 200g marmalade

  • 150g caster sugar

  • Pinch of cinnamon

  • 120g melted butter, plus extra to grease muffin tray

  • Icing sugar, to dust


  • 1.

    Preheat oven to 180C.

  • 2.

    Grease a 12 hole muffin tray.

  • 3.

    Sieve the flour into a large mixing bowl. Add sugar, orange zest and cinnamon.

  • 4.

    In a separate bowl, mix the egg, buttermilk and vegetable oil together. Add this mixture to the dry ingredients, and gently fold through until combined.

  • 5.

    Spoon the mixture into the greased muffin holes. Make a hole in the top of the muffin and drop a teaspoon of marmalade into it.

  • 6.

    Bake for 15 minutes or until a skewer comes out clean.

  • 7.

    Meanwhile, in a mortar and pestle, grind the caster sugar and cinnamon to make a fine sugar dust. Carefully remove the muffins from the tin. Dip the tops of the muffin in the melted butter, followed by the cinnamon sugar dust. Transfer the marmalade to a piping bag and pipe in the extra marmalade in the top of the monuts.

    Serve warm.
