Doughnuts are very popular at the moment. These are sure to be a hit for guests and kids.
Dissolve yeast into a drop of warm water, add sugar and let rest for a while.
In another bowl, mix room temperature coconut butter, butter and sugar together. Whip gently with a mixer. Add eggs and mix again. Then add vanilla extract, nutmeg and salt. Combine with risen yeast and add rest of the water. Then start adding the flour, one measure at a time. Keep mixing and keep adding flour until the consistency is dough-like.
Let the dough rise for about half an hour and check. Every now and then, punch the dough down and let it rise again for at least half an hour.
Roll the dough and form into small donuts. You can use ring molds as well. Heat the coconut butter to 190°C and fry until golden brown on both sides.
Drain on kitchen paper to remove excess fat.
Make the frosting mixing icing sugar and water. Add food colouring according to your liking. If you want different coloured frosting, divide the paste into few bowls and use different colours. You can also add for example orange, strawberry or blueberry extract into the frosting if you want. Decorate with different coloured sprinkles.
