'Gravad' is another way of saying 'Gravlax' - a type of cured salmon. 

Ingredients

  • Betroot salmon

  • 700 g salmon fillet

  • Seasoning:

  • 1 beetroot, coarsely grated

  • 1 - 1 ½ tbs sea salt

  • ½ tbs cane sugar

  • 2 tsp horseradish paste

  • ½ bunch dill, chopped

  • Lemon & Lime Whitefish

  • 600–700 g whitefish

  • Seasoning:

  • 3 lime zests, grated

  • 1 lemon grass, chopped

  • 1-1 ½ tbs sea salt

  • ½ tbs cane sugar

  • ½ bunch coriander, chopped

Method

  • Salmon:

  • 1.

    For the seasoning, mix the ingredients together in a bowl. Spread the seasoning on top of the fillet and cover with plastic wrap. Let it rest in the fridge overnight.

  • 2.

    Wipe off seasoning with moist paper towel and slice into thin slices.

  • Whitefish:

  • 1.
