Lingonberries are found in Scandinavian forests and therefore often end up on local plates as well!
Combine all ingredients apart from bacon, mix into a smooth mass. Place the mass on a baking tray covered with baking paper and form into a large loaf. Wrap bacon slices around the loaf and bake in 180°C oven for about 40 minutes.
Then, turn up the heat to 240°C and bake for another 15–20 minutes. Serve with braised red cabbage.
Braised Red Cabbage:
Slice the cabbage into thin slices and sauté on a frying pan. Add seasonings and let stew until soft.
