Lingonberries are found in Scandinavian forests and therefore often end up on local plates as well! 


  • A total 1kg of minced meats; reindeer, beef and moose

  • 150ml cream

  • 2 tbs Dijon mustard

  • 1 egg

  • 100mllingonberries

  • salt

  • honey

  • 1 large onion, chopped and sautéed

  • all spice

  • apple jam

  • 1 pack bacon

  • Braise Red Cabbage

  • 1 smallish red cabbage

  • 100ml apple vinegar

  • salt

  • 3 tbs sweet molasses (or dark syrup)

  • 2-3 tbs butter

  • 150ml beef stock

  • black pepper


  • Meatloaf:

  • 1.

    Combine all ingredients apart from bacon, mix into a smooth mass. Place the mass on a baking tray covered with baking paper and form into a large loaf. Wrap bacon slices around the loaf and bake in 180°C oven for about 40 minutes.

  • 2.

    Then, turn up the heat to 240°C and bake for another 15–20 minutes. Serve with braised red cabbage.

  • Braised Red Cabbage:

  • 1.

    Slice the cabbage into thin slices and sauté on a frying pan. Add seasonings and let stew until soft.
