Herring is traditionally found in colder climates like those in Northern Europe and is therefore a staple in most Nordic households. 


  • 1 Scandinavian rye and malt bread, sliced, cut into preferred shape

  • Filling:

  • 3 tbs smetana (Russian sour creme) or regular sour crème/crème frâiche

  • 2 tbs low fat sour cream

  • 1 1/2 glass jar pickled matjes herring / sherry herring, cut into small pieces

  • 1 leek, chopped

  • 1/2 apple, cut into small pieces

  • salt

  • black pepper

  • Garnish:

  • watercress / caviar / chopped leek

  • quail eggs


  • 1.

    Cut slices of the rye bread and cut out round pieces with e.g. a ring mold. Mix the ingredients together thoroughly. Spread butter onto the bread slices and spread the filling on top. Garnish with quail eggs, watercress/caviar or chopped leek.
