This gorgeous Italian dessert (ricotta mousse) is super simple to whip up. 


  • 250g Ricotta

  • 4 tablespoons icing sugar

  • 2 eggs

  • 100ml double cream

  • 2 tablespoons Rum or Marsala


  • 1.

    Beat together the eggs, icing sugar and ricotta.

  • 2.

    Add your rum and beat again.

  • 3.

    In a separate bowl beat the double cream to soft peaks (do not overbeat)

  • 4.

    Now fold your cream into the ricotta mix.

  • 5.

    Serve with poached pears or mixed berries and crumble topping of crushed amaretti biscuits soaked in a little rum.
