The fantastic homemade oils are great for cooking, salad dressings and toppings.

Ingredients

  • Balsamic Glaze (Makes 500ml)

  • 570ml balsamic vinegar

  • 570ml red wine

  • 130g dark brown sugar

  • Hot Chilli Oil (Makes 250ml)

  • 1 x 250ml bottle of olive oil

  • 5-10 fresh red chilies, depending on how hot you want it

  • 1 teaspoon peperoncino powder or cayenne pepper

  • Garlic and Rosemary Oil (Makes 250ml)

  • 1 x 250ml bottle of olive oil

  • 4 cloves of garlic, peeled

  • 4 sprigs of fresh rosemary

Method

  • Balsamic Glaze:

  • 1.

    Bring vinegar and red wine to the boil in a heavy saucepan - lower the heat and simmer until reduced by half.

  • 2.

    Stir in the sugar, allow it to melt and slowly increase the heat - boil vigorously until reduced by half again. Leave to cool before transferring to a sterilized bottle.

  • Hot Chilli Oil:

  • 1.

    1 x 250ml bottle of olive oil

  • 2.

    5-10 fresh red chilies, depending on how hot you want it

  • 3.

    1 teaspoon peperoncino powder or cayenne pepper

  • Garlic and Rosemary Oil:

  • 1.

    Pour the oil into a saucepan, and sterilize the bottle.

  • 2.

    Add the garlic and rosemary and heat on a medium heat for 5 mins. Be careful not to burn the garlic or rosemary.

  • 3.

    Let the oil, garlic and rosemary cool to room temperature before transferring to the bottle.
