A Nordic take on the old beef burger.
Mix all the burger patty ingredients with a handheld mixer so that the lard combines well into the beef. Shape patties by hand and press together until firm. Brown the patties in a sauté pan for about 2 minutes on each side and then finish cooking them in the oven for 8-10 minutes at 200° C, until medium rare. For more well done patties, cook up to 12 or 15 minutes. Place a couple slices of Emmental cheese to melt on top just before you take the patties from the oven.
While the burgers are baking, prepare the mayonnaise sauce. Mix good quality mayonnaise, a small drizzle of truffle oil and chopped crispy fried bacon in a medium mixing bowl. Season with salt, a bit of sugar and black pepper. Put aside.
Next, prepare the mushrooms. Slice them and sauté on a pan with butter until soft and browned. Season with salt and pepper.
Toast buns on a sauté pan until warm and slightly crispy.
Next, assemble the burgers. First, spread good quality mustard on the bun. Then add lettuce on top of the bread. Place the burger patty, then drizzle the mayonnaise sauce over the top of the burger. Lay on the mushrooms and a couple slices of pickles. Finally, spread some ketchup on the other side of the bun, put the top on, and enjoy!
