Sea Buckthorn is known for its healing properties and can help with a range of ailments, from arthritis to ulcers and skin rashes.


  • Mousse:

  • 100ml sea buckthorn juice

  • 100ml sugar

  • 2 eggs

  • 150ml Turkish yoghurt

  • 1 vanilla pod’s seeds

  • 3 gelatine leaves

  • Sauce:

  • 200 ml sea-buckthorn juice

  • ½ mango

  • 1-4.5 tbs sugar

  • 3 gelatine leaves

    Prepare the mousse. Soak gelatine leaves in cold water. Whisk sugar and eggs into a foam. Add yoghurt and vanilla seeds. Warm sea-buckthorn juice in a saucepan, add gelatine leaves and let them melt. Let the mixture cool a little and add it into the foam. Pour into glasses and let stiffen in the fridge. Meanwhile, prepare the sauce.

    Soak gelatine leaves in cold water. Puree the mango and mix together with sea buckthorn juice into a smooth mass. Squeeze the gelatine leaves to remove excess water. Warm the sea buckthorn juice and mango mixture, add sugar and gelatine leaves. Let the leaves melt. Let cool and spoon on top of the stiffened mousse.
