Made with capers, anchovies, red wine and red and yellow tomatoes, this colourful salad is both tasty and healthy.

Ingredients

  • 200 g stale loaf

  • 600 g mixture ripe red & yellow tomatoes , roughly chopped ( or use a yellow pepper to replace

  • the yellow tomato)

  • 1 handful small capers, drained approx 50g

  • 1 handful fresh parsley leaves roughly chopped

  • 1 handful fresh basil leaves roughly chopped

  • 1 medium red onion, peeled and very finely sliced

  • 6 anchovy fillets in oil, drained and finely sliced (optional)

  • 1 garlic clove

  • 50ml red wine vinegar 80ml extra virgin olive oil 1 tsp sea salt

  • freshly ground black pepper

Method

  • 1.

Cut the tomatoes into large chunks and place in a colander and set over this bowl and leave to drain while you prepare the other ingredients.

  • 2.

Cut the bread into chunks about the same size as the tomatoes, place in a large salad bowl and moisten with vinegar.

  • 3.

Now to this add your finely sliced onions, capers, and parsley followed by your drained chopped tomatoes and gently toss making sure you hold back the tomato juice.

  • 4.

Now make your dressing by mixing into the reserved tomato juice the chopped anchovies, crushed garlic, salt and pepper and then whisk in the olive oil.

  • 5.

Pour over the salad ingredients and finally add the basil leaves tossing gently. Taste if additional salt and pepper is needed .

  • 6.

Cover and allow to sit at room temperature for 10 to 15mins before serving to give the flavours more of a chance to mingle.

Notes

Soak the finely sliced onion in a little salt & a drizzle of olive oil for 20 mins as this will deliver the sweetness without the bite.
