This gorgeous dessert is surprisingly simple to make. Try it for yourself!
Pre heat the oven to160*C and grease and line a round 22cm tin.
Separate the eggs into 2 bowls, beat the egg whites till stiff peaks and leave to one side.
To the yolks add the maple syrup, olive oil and grated pears and mix together.
Now add the rest of the dry ingredients and mix well.
Lastly fold in the beaten egg whites.
Pour into a greased and lined 9 inch sprung tin and sprinkle with the flaked almonds.
Bake for one hour. The cake should have shrunk away from the sides of the tin.
