This gorgeous dish made with zucchini and cherry tomatoes will fast become a family favourite.
Put several wooden skewers to soak in water.
Place all the ingredients apart from the oil in a large bowl and mix together with your hands and shape into walnut-sized balls.
Cut your washed zucchini into 2cm discs. With damp hands, begin by shaping one of the meat balls around and along each skewer, pressing a little for a nice texture.
Follow with a piece of zucchini then a tomato and repeat till the skewer is full (leaving 3 cms either end to handle)
Drizzle with a little olive oil and seasoning.
Grill the kebabs for 8-10 minutes until golden and cooked through.
