Perfect for work lunches, this recipe simply requires you to add hot water when ready to eat. Clever! 

Ingredients

  • 1 small handful coriander leaves + a few fresh mint leaves

  • 1 small, fresh red chilli (finely sliced), or a pinch chili flakes or cayenne

  • 1 small garlic clove, finely minced

  • 3 tablespoons freshly grated ginger

  • 1 tablespoon tamari

  • ¾ teaspoon toasted sesame oil

  • 1 handful cooked shredded chicken

  • 1 handful spinach leaves or shredded red cabbage

  • 1 small courgette, roughly grated or spiralized into courgetti (or any other vegetable noodles)

Method

  • 1.

    Add your ginger, garlic, chilli, sesame oil and tamari to your heatproof jar.

  • 2.

    Add your shredded chicken on top of these, along with your spinach or cabbage and coriander. Follow these with your vegetable noodles.

  • 3.

    Finally, add 1 tablespoon of coconut oil.

  • 4.

    Refrigerate until ready to eat.

  • 5.

    When ready, boil the kettle and remove the lime wedge from the jar.

  • 6.

    Let the boiled water sit for a minute or two before adding it to the jar, leaving a half-inch gap at the top.

  • 7.

    Stir, cover and let sit five minutes.

  • 8.

    Remove the lid, stir again, squeeze in the lime juice and enjoy.
