A sophisticated meal, packed with taste and nutrients.

Ingredients

  • 2 cups water

  • ½ cup French green lentils (or red lentils)

  • 1 tbsp butter

  • 2 tbsp shallots

  • 1 tsp ginger

  • 2 cups bok choy

  • ½ cup corn (frozen)

  • 1 tbsp tamari soy sauce

Method

  • 1.

    Bring water to boil, add lentils and stir well.

  • 2.

    Bring back to boil, reduce heat to medium-low and cover.

  • 3.

    Simmer for 25 minutes or until lentils are at desired firmness.

  • 4.

    Drain excess water and set aside.

  • 5.

    Preheat a non-stick frying pan on medium heat.

  • 6.

    Add butter, shallots, ginger, and bok choy and sauté for 1 minute.

  • 7.

    Add corn, cooked lentils and soy sauce and stir until combined.

  • 8.

    Serve and enjoy!
