Out with boring vegetables and in with these fantastic pizza-ettes.


  • 3 Portobello mushrooms (stems and gills removed, large)

  • 1 cup Salsa (homemade recipe below)

  • ¼ cup Pine nuts

  • ¼ cup Parmesan cheese

  • Salsa

  • ¾ cup Vine-ripened tomato (small diced)

  • ¼ cup Red onion

  • ¼ cup Corn

  • ¼ cup Black beans

  • 1 tsp  Fresh Garlic (minced)

  • 1 tbsp Lime Juice

  • 1 tbsp Fresh corriander

  • 1 pinch Salt

  • 1 pinch Pepper

  • 1 pinch Chilli power

    Preheat oven to 400 degrees F. Place mushroom, upside down, on baking tray and top each one evenly with salsa then pine nuts and then parmesan cheese. Bake for 10-12 minutes.

    Combine all ingredients in a mixing bowl and toss until well combined. Look at it for three mintues while thinking ‘that was easy.” Then serve or store.
