Ice cream for breakfast? Why not! The addition of coconut milk to this acai bowl makes it a delicious, creamy, quick and easy, nutrient packed summer breaky. If you don’t have access to frozen acai try using powder and add an extra frozen banana.


  • 1 packet of frozen unsweetened acai pulp

  • 1 tsp honey

  • 150ml Vitasoy unsweetened coconut milk

  • 1 frozen banana

  • ½ fresh banana

  • 3 strawberries 

  • 1 tbsp buckinis (activated buckwheat)

  • 1 tbsp cacao nibs


  • 1.

    In a blender place acai pulp, frozen banana and coconut milk. Blend until smooth. Add extra coconut milk until desired consistency. 

  • 2.

    Pour into bowl and top with fresh fruit, buckinis and cacao nibs.
