vegetarian dish


  • 1 small onion

  • 1 large eggplant

  • 1 cup water with rosemary

  • 1 cup mixed bell pepper

  • 1 ts lemon zest

  • 1 ts dash spice

  • 1 ts paprika

  • Salt pepper to taste

  • 1 cup mazzorella cheese

  • 2 cups mashed potatoes

  • 1 t s Italian parsley


  • 1.

    First fry the onions until they are translucent add the eggplant cook well until eggplant started to change color light brown add the paste and Water Mix well and add the spices season it to taste

  • 2.

    Keep it for another 10 min remove from heat add the bell peppers and the Chelsea with lemon zest mix well and transfer to a baking Dish add the mash potatoes on top add the remaining cheese and bake it for 30 min @400 and as always enjoy
