You will love this salad if you're a bit time-poor, and need to try something new. 


  • 4 carrots grated

  • 1/2 bunch of coriander leaves, picked

  • 4 tablespoons poppy seeds

  • Seeds from 1 fresh pomegranate

  • Juice and zest of 1 lime

  • Salt flakes and freshly ground black pepper

  • 2 tablespoons extra-virgin olive oil


  • 1.

    Pile the grated carrot into a big bowl, then add the coriander, poppy and pomegranate seeds and lime juice and zest.

  • 2.

    Season with salt flakes and freshly ground pepper to taste and drizzle with extra-virgin olive oil. And it’s ready!
