Make the most of seasonal stonefruit this summer and create this delicious side. 


  • 2 yellow peaches, stone removed, diced, skin on

  • 2 Lebanese cucumbers, diced

  • 1 large red capsicum, diced

  • Juice of 1 lime

  • 1 tbsp fresh coriander, finely chopped


  • 1.

    Mix peaches, cucumber and capsicum together in a large bowl.

  • 2.

    Squeeze the lime juice onto the salad and add coriander.

  • 3.

    Serve with nectarine sliders
