The Great Australian Bake Off

These Macedonian delights are made with feta, ricotta and homemade tzatziki. 


  • Pastry x2

  • 500g plain flour

  • 5g instant yeast

  • 10g table salt

  • 390g water

  • 1 big clove Australian purple garlic, finely grated

  • 250g ghee

  • Filling #1

  • 250g Australian feta cheese

  • Filling #2

  • 1 bunch of English spinach

  • 1 egg

  • 250g ricotta

  • 100g Australian feta cheese

  • Freshly ground pepper

  • Tzatziki

  • 500g Greek yoghurt

  • 1 clove of garlic

  • 1 Lebanese cucumber


  • Pastry:

  • 1.

    Place all ingredients in a mixing bowl to make pastry

  • 2.

    Beat with dough hook until smooth and glossy approx 10 minutes

  • 3.

    Line bench with baking paper and dust with flour

  • 4.

    Separate dough into 3 equal portions

  • 5.

    Cover with flour and roll out into a pancake

  • 6.

    Cover with olive oil and glad wrap

  • 7.

    Allow to rest for approx 15 minutes

  • 8.

    Place on floured table cloth and stretch out until very thin

  • 9.

    Add filling #1 to half the quantity of pastry and filling #2 for the second half of the quantity

  • 10.

    Baste the top of pastries with butter and bake in hot oven approx 220C for 20-30 minutes

  • Filling #1:

  • 1.

    Crumble feta cheese

  • Filling #2:

  • 1.

    Wilt spinach, drain, cool and chop

  • 2.

    Crumble feta and ricotta, add pepper, egg and add chopped spinach

  • 3.

    Mix together

  • Tzatziki:

  • 1.

    Strain yoghurt

  • 2.

    Add grated cucumber and garlic and mix well

  • 3.

    Serve with pastries
