Served with caramelised onion relish, this lunch recipe is healthy and full of flavour. 


  • 1 tablespoons olive oil

  • 2 tablespoons Baxters Caramelised Onion Relish

  • 2 cups cooked lentils

  • 1 cup roasted vegetables of your choice, like carrots, parsnips and onions

  • Seeds from 1/2 a pomegranate

  • Handful of fresh mint leaves

  • Salt, to taste

  • Pepper, to taste


  • 1.

    In a small bowl, whisk olive oil and relish.

  • 2.

    In a large bowl, toss lentils, vegetables pomegranate, and mint leaves with dressing.

  • 3.

    Season with salt and pepper and serve.
