Make this incredible recipe the centerpiece at your Christmas this year. 

Ingredients

  • For the Stollen

  • 500g bread flour

  • 100g caster sugar

  • 10g instant yeast

  • 150g unsalted butter, room temperature

  • 250ml milk

  • 1 vanilla bean

  • 100g hazelnuts, roasted skins removed

  • 300g fresh dates

  • 100ml hazelnut liqueur

  • 1 teaspoon cinnamon

  • 200g 70% chocolate, chopped

  • 25g extra unsalted butter

  • 300g icing sugar (pure)

  • For Hazelnut Marzipan

  • 2 cups hazelnut meal

  • 2 cups pure icing sugar

  • 1 egg white

  • Decorative Marzipan Fruits

  • 2 cups almond meal

  • 2 cups pure icing sugar

  • 1 egg white

  • Gel colours

Method

  • 1.

    Chop dates and soak in hazelnut liqueur

  • 2.

    Roast hazelnuts

  • 3.

    In the bowl of a kitchen aid place the flour and sugar and put yeast to one side of the bowl and salt to the other

  • 4.

    Add butter and 200ml milk

  • 5.

    Mix until combined

  • 6.

    With dough hook attached add the remaining milk and begin kneading

  • 7.

    Turn out onto floured surface and continue kneading for 7 minutes or until dough is elastic and smooth

  • 8.

    Chop chocolate and hazelnuts, mix with drained dates and cinnamon

  • 9.

    Knead into dough and then leave to prove in a greased bowl until doubled in size

  • 10.

    Meanwhile make hazelnut marzipan by processing all ingredients in a food processor until it reaches the right consistency, possibly adding in a little more meal and icing sugar

  • 11.

    Once dough is ready, roll out marzipan into a sausage shape. Roll dough into rectangle and then enclose marzipan inside. Shape dough into a wreath and then leave once again to prove until doubled in size

  • 12.

    Brush with a little butter and bake at 190C for 1 hour

  • 13.

    As soon as stollen comes out of the oven brush with melted butter and coat liberally with icing sugar

  • 14.

    Make marzipan fruits for decoration
