Featuring basil, feta and cherry tomatoes, these savoury delights will be a hit. 

Ingredients

  • Flat Bread

  • 250g Greek yoghurt

  • 2 cups self raising flour

  • 250g Australian full cream feta cheese

  • Bunch of basil

  • Salt 

  • Filling

  • 250g chicken thigh fillets

  • 2 lemons

  • 2 tbs extra virgin olive oil

  • Chicken stock powder

  • Purple garlic

  • Ground pepper

  • Tomatoes (kumato or black Russian) cherry size

  • Tzatziki

  • 750g Greek yoghurt

  • 1 clove of crushed garlic

  • 2 Lebanese cucumbers

  • Salad mix

Method

  • Flat bread:

  • 1.

    Mix 250g Greek yoghurt and 2 cups of self raising flour into a smooth dough.

  • 2.

    Cut dough in half.

  • 3.

    Mix in crumbled feta and chopped basil

  • 4.

    Split dough into 6 pieces and shape

  • 5.

    Cook in pan with a light smear of olive oil

  • Filling:

  • 1.

    Dice chicken

  • 2.

    Marinate with lemon, garlic, chicken stock, olive oil and pepper.

  • 3.

    Cook in fry pan or barbeque

  • 4.

    Cut tomatoes

  • Tzatziki:

  • 1.

    Strain yoghurt

  • 2.

    Grate and strain cucumbers

  • 3.

    Grate garlic

  • 4.

    Mix together

  • 5.

    Place filling in cooked flat breads
