This dairy and gluten free recipe makes for the perfect, delicious snack. 


  • 2 cups of cashews

  • 2/3 cup of almond meal

  • 1/3 cup fresh medjool dates

  • 1 tbsp of lemon juice

  • 1 tbsp of lemon zest

  • 1 tbsp of fresh ginger grated

  • 1 tsp of cinnamon

  • 1 tbsp of honey

  • 1 ½ tsp of tahini

  • Desiccated coconut for garnishing


  • 1.

    Place all nuts in a food processor. Blitz until you have a crumb-like consistency.

  • 2.

    Add all remaining ingredients until mixture is evenly combined and soft enough to roll into balls. If the mixture is too dry add a little water.

  • 3.

    Roll mixture into bite-size balls and coat in desiccated coconut


Note: Store balls in the refrigerator for up to a week.
