Place the water and sugar in a saucepan and on a medium low heat. Stir just until the sugar dissolves, then remove from the heat.
Soften the leaves of gelatin in cold water for 3 minutes, then dissolve in the syrup.
Pour the prosecco into a jug, then gently mix in the syrup and gelatin mix. Divide between 4 glasses and place in the freezer for half an hour. Then remove and place in the fridge for a further 3 hours to set.
