• 1 Cucumber sliced thinly

  • 2 carrots grated

  • 0.5 Red Onion sliced thinly

  • 2 cm fresh grated Ginger

  • 0.25 cup Cider Vineger

  • 2 tablespoons Honey

  • 0.25 cup Olive Oil

  • 1 bunch fresh Mint chopped

  • Salt & Pepper

    Put ingredients into a medium sized bowl and toss well.
