Baked Halibut with Tomatoes and Onions

Ingredients

  • 2 Onions peeled and sliced

  • 2 Tomatoes chopped

  • 1 heaping tablespoon Curry powder

  • Salt

  • 0.5 cup orange juice

  • 1 lb fresh halibut

  • 1 tablespoon Oil

  • Salt & Pepper

Method

  • 1.

    Preheat oven to 375 degrees F.

  • 2.

    Place onions in an 8" by 8" baking pan and then add tomatoes, curry powder, salt and orange juice.

  • 3.

    Rub fish with oil and salt and pepper and place on top of the vegetables.

  • 4.

    Bake for 20 minutes, or until the fish flakes and is just cooked through.

AM GOING TO TRY THIS RECIPE ONLY WITH sEA BASS - HERE IN sPAIN THIS IS VERY GOOD VALUE FOR MONEY.
