  • 3 Sweet potatoes peeled and cut into one inch slices

  • 2 tablespoons chopped Rosemary

  • 1 cup orange juice

  • 1 Red Onion sliced thickly

  • Salt & Pepper


  • 1.

    Put sweet potatoes into a large sauté pan.

  • 2.

    Add rosemary, orange juice, red onion and season with salt and pepper.

  • 3.

    Bring to a simmer and cook for about 10 to 15 minutes, until the potatoes are tender.
