The Great Australian Bake Off

The festive treats are created with white chocolate, cinnamon, ginger and bourbon.


  • Biscuit

  • 65g unsalted butter

  • ¼ cup brown sugar

  • ¼ cup golden syrup

  • 1 egg yolk

  • 1 ¼ cups plain flour

  • 1.5 teaspoons ground ginger

  • 1.5 teaspoons mixed spice

  • 1 teaspoon bi carb soda

  • Filling

  • 600g white chocolate

  • ½ cup condensed milk

  • ½ tsp mixed spice

  • ¼ tsp cinnamon

  • 1/4 cup bourbon

  • 2 heaped cups icing sugar mixture

  • 20ml canola oil


  • 1.

    Cream butter, sugar and syrup and egg

  • 2.

    Stir in flour, spices and bi carb

  • 3.

    Roll dough out thin, use cookie cutter to cut 24 trees

  • 4.

    Place in preheated 160c oven for 10-15 minutes or until darkened brown

  • 5.

    Allow biscuits to cool, make filling

  • 6.

    Melt ½ white chocolate with ¼ cup condensed milk

  • 7.

    Add spices, bourbon and icing sugar. Allow to cool ( chill in freezer to speed things up)

  • 8.

    Squish approx tablespoons of filling between 2 trees and neaten the edges

  • 9.

    Melt the remaining white chocolate with just a smidge of oil

  • 10.

    Coat the biscuits in white chocolate and allow to cool
