This beautiful biscuit is a must have at your next high tea!
Pre-heat oven to 180 C.
To make biscuits, rub together all of the ingredients except the eggs. Once chunky breadcrumbs form add eggs and mix with your hands until a dough forms. Turn half onto a lightly floured bench and bring together with a few light kneads. Roll out dough and cut out 12 circles. Place on a paper-lined tray and refrigerate. Repeat with remaining dough.
Bake for 12 minutes.
Whisk together filling ingredients. Spread on half of the cooled cookies. Sandwich the icing-daubed cookies with the remaining 12 cookies.
For Drizzle Icing:
Divide icing sugar between two small bowls and add water. Add orange juice and orange colour. Stir, place in icing bags and drizzle over sandwiched biscuits.
