For something different to the traditional shepherd's pie, why not try substituting with goat meat.
Melt the butter in frying pan, fry the minced goat meat until browned (in batches if necessary) and then add the stock.
Simmer until the stock has reduced 90% from the 1L added.
Add carrot, onion, thyme, flour, salt and pepper, and simmer for 5 minutes, or until thickened.
Place meat in an ovenproof dish, cover with tomato slices and place the mash on top of the sliced tomato. Sprinkle with grated cheese.
Bake in a moderate oven (180ºC if fan forced, 190ºC if not) until potato is golden brown.
