A healthy burst of protein to satisfy any cravings between meals.
Blend all the nuts in your food processor or blender until well broken down into a nut meal texture. Pour this into a large bowl.
Add all the powders and seeds to the bowl and mix.
In the food processor blend goji berries and a splash of water into a puree. Mix the puree into the bowl.
Melt your coconut oil then it too will stir easily into the bowl.
Stir in honey and vanilla extract for flavour.
Shape large spoonfuls into balls and roll in ground coconut flakes, before placing in a dish or container.
Set in the fridge for an hour or two, or over night.
