A beautiful light dish of zucchini strips with poached chicken and chia seeds.
Using a mandolin, shred zucchinis into a long pasta shape & place into a large bowl.
Heat oil in a frying pan. Add garlic and chili and cook for 1 minute or until garlic is light golden. Add tomatoes; cook for 2 minutes or until soft. Add lemon juice, rind, chicken stock, pine nuts, chicken and chia seeds, swirl pan to combine. Cook for 2 minutes to heat chicken through. Add basil and season well.
Toss the zucchini pasta through the chicken mixture, divide between serving plates and garnish with parmesan.
