Put a pot on the stove and half fill it with frying oil, heat to a temperature of 180 degrees celsius.
Meanwhile, sieve the flour into a mixing bowl and combine with the sugar, baking powder and the pinch of salt.
In a separate bowl, whisk together the milk, melted butter and eggs. Pour the liquid ingredients over the dry ingredients and gently whisk together until a smooth batter has formed.
Once the oil is up to temperature, use one teaspoon to scoop up some batter and use another to push it off into the oil. Repeat until there are a few doughnuts bobbing away happily in oil. Be patient and don't over crowd the pan, work in batches until all the batter is gone.
In a mixing bowl toss together the sugar and ground cinnamon and then toss in the still hot doughnuts, give them a good roll in the sugar mix to ensure they're evenly coated. Enjoy straight away. Makes approximately 30 small doughnuts.
